Ok, so, breakfast. This meal kept me full all the way through church!
It's packed with protein, minerals and vitamins. Healthy and tasty!
spinach egg bake
2 large eggs
1.5 cups fresh baby spinach (leeks would be great also)
1/2 tbsp crumbled feta paprika, salt and pepper
Preheat the oven to 400°. Cook the spinach in a pan on medium-high heat until it starts to wilt. Transfer to an individual ramekin. Crack the eggs over the spinach and sprinkle the feta on top. Season with paprika, salt and pepper. Bake 14-17 minutes, or until the white is cooked.
Once it's cooked, the feta becomes creamy and makes it all so delicious! Next time I think I'll add some cherry tomatoes.
