Tonight proves that you don't always have to give up your favorites foods when trying to live a healthy lifestyle. Cheese fries are my weakness. Not just any cheese fries, but the ones from Cheddars. It has the perfect cheese-to-fry ratio. You're not left with a plate of cheeseless fries after eating the top layer. And the bacon is fresh. And the ranch is stellar. But even so, the feeling of being miserably stuffed afterwards hardly makes it worth it.
These sweet potato cheese fries have less than half the calories and fat. It's still probably not wise to eat these every day, but it's a great way to satisfy a hankering for cheese fries! Sweet potatoes and Parmesan were made for each other.
Spicy Baked Sweet Potato Cheese Fries
1 small-medium sweet potato
1 tbsp freshly grated Parmesan
1 tbsp canola oil
1 tbsp taco seasoning
Few dashes of cayenne pepper
Preheat oven to 425 °. Slice potato into thin fries and put in a zip lock bag. In a small bowl, combine oil, seasoning and cayenne, and pour into the bag. Shake it up until all the fries are coated. Lay them in a single layer on a greased baking sheet and cook for 15-20 minutes, depending on the thickness. Turn them over and cook for an additional 5 minutes, or until they're tender on the inside and crispy on the outside. Sprinkle with Parmesan.
