Hidden underneath that blanket of cheese is a mexican rice concoction that surpasses Chipotle and is guaranteed to not give you indigestion. If you do get indigestion from this... it's from the alarming amount of cheese I used, which is optional anyway.
But really. This is a healthy way to eat mexican food. This recipe is fresh.
This may look stressful, but it's really not. The key is to cook the rice and ground turkey ahead of time.
The first thing to do is wash, cut and seed the peppers. Rub them with some olive oil and roast them in the oven on 400 degrees for 20 minutes. While that's cooking, mix the taco seasoning with the cooked turkey, then add black beans, corn, rice, sauteed onions and salsa. Spoon the rice mixture into the bell peppers and put back in the oven for 15 minutes. Sprinkle with cheese and return to over until the cheese is melted. I like to top it with light sour cream, avocado slices, and fresh cilantro.
Southwestern Stuffed Bell Peppers
3 sweet bell peppers
1 lb ground turkey
1.5 cups brown rice
1 cup chopped onions
1 15 oz jar salsa
1-2 tbsp taco seasoning
1 tbsp olive oil
1/2 cup frozen corn
Toppings: shredded cheddar cheese, lite sour cream, avocado, cilantro
Preheat oven to 400 degrees. Wash the bell peppers, cut them in half and remove the seeds. Rub them lightly with olive oil and put in the oven for 20 minutes. In a pan, saute the onions with a little olive oil until tender. Add the turkey meat until cooked through. Ad taco seasoning, salsa, beans, corn and cooked rice. Spoon this mixture into the peppers and return to the oven for 15 minutes. Sprinkle with cheese and return to oven until the cheese is melted. Top with sour cream, avocado slices and fresh cilantro.
Last night at church we started the Christian Atheist study by Craig Groeschel. It is con-vict-ing. Discusses how many people believe in God and even know Him personally, but live as if He doesn't exist. The goal of this study is to know God in a deeper way, to serve Him whole-heartedly and to boldly believe what David said in Psalm 63 - God's love is better than life. Not only to believe it, but to live as if it's true. I'm so thankful for my Father!
