aka: grown-up grilled cheese.

This was delicious! I felt like I was eating in a quaint little bakery in France.

You could even have it open-faced.
I’m trying to be more classy and adventurous in my cheese selections. So today I went for Brie and Fontina. I did a taste test.
Fontina won. The Brie was delicious, but it was much stronger and richer. I wanted something mild. Next time I think I’ll try the Brie with strawberries and balsamic.
Grilled Fontina & Blackberry Basil Sandwich
Ingredients:
2 small slices of fresh sourdough bread
5 blackberries
2 basil leaves, chopped
2 oz fontina cheese, sliced
1 tbsp olive oil
Directions:
Rub bread slices with olive oil. Smash blackberries with a fork and stir in basil. Layer the cheese on one slice of bread and broil in the oven for 2 minutes, until the cheese starts to melt. Spoon blackberry basil mixture on top of cheese and top with the other piece of bread. Finish on the grill. Enjoy!
