I was at Central Market, perusing the produce when I saw these beautiful Heirlooms!
I combined these with some fresh mozzarella & basil, tossed with orzo pasta to create this summery salad. Yum!
Orzo Caprese Salad
1 cup tomatoes
1/2 cup fresh mozzarella
1 cup cooked orzo
2 tbsp olive oil
1 tsp balsamic pepper
Cut tomatoes and mozzarella into bite size pieces. Combine with basil and cooked (and cooled) orzo. In a small bowl, mix olive oil and balsamic. Pour over salad and add pepper to taste. Let it chill in the fridge for 30 minutes.
