I don't love cucumbers, unless they're marinated in vinegar and served with red onions! Yum. This is perfect for summer.
I had no idea what I was doing when I made this so I was surprised it turned out so delicious. The recipe calls for white vinegar. which I thought I had. But when I started making it, I realized what I had was white wine vinegar. Totally not the same thing. But I did have rice vinegar and apple cider vinegar. They smelled nice so I used them :)
Be sure to go easy on the salt and heavy on the pepper! Too much salt takes away from the freshness.
Marinated Cucumber Salad
3 cucumbers, thinly sliced
1 red onion, sliced
1 cup of sliced tomatoes
1/2 cup rice vinegar
1/2 cup apple cider vinegar
1 tbsp lite mayo
2 tbsp plain non-fat Greek yogurt
salt & pepper
Pour both vinegars in a bowl, add cucumbers & onions and let them marinate for 1 hour in the fridge. Stir every 15 minutes. In a separate bowl, combine mayo, yogurt, salt & pepper. Drain the cucumbers and onions, and add the yogurt mixture. Add the tomatoes last. Let sit in the fridge for another hour. Add fresh dill if you have it!
