Rice-less fried rice! It seriously tastes like the real deal. I would not lie to you. Rice is substituted with grated cauliflower, and it's SO easy to make.
Chinese food may be my favorite. Yum!
Cauliflower Fried Rice
Ingredients [3-4 servings]:
½ onion, diced
1 tbsp minced garlic
1 tsp olive oil
¾ cup frozen peas and carrots
1 head cauliflower, grated (use a cheese grater or food processor)
1 egg and 2 egg whites
3-4 tbsp low sodium soy sauce
Heat oil on the stove over medium-high heat for a minute. Add onions and garlic and let cook for 3 minutes. Add peas and carrots and cook for 3 minutes. Add eggs and scramble into the veggies. Add cauliflower and soy sauce and let it cook for 5-8 minutes. That’s it! So many other things you could add :)
