I made a large batch of these potatoes and had them for breakfast, lunch and dinner - two days in a row. NOM. They're crispy on the outside, soft on the inside. And they make great leftovers!
cumin roasted potatoes with feta sauce
2 lbs red potatoes, washed & quartered 2 tbsp olive oil 2 tsp ground cumin salt & pepper
Preheat the oven to 400 degrees. Toss the potatoes with olive oil and season with cumin, salt & pepper. Bake for 20 minutes, flip the potatoes, bake for another 20-30 minutes. Click here for the feta sauce recipe.
