Isn’t she beautiful?
This dish is so tasty. I just love fresh veggies. Squashes, in particular, are my favorite. And then there’s garlic and onions. Squash + garlic + onion = holy trinity of food.
The sauce is thick and chunky. The fresh basil is a must!
I topped it with freshly grated parmesan. It seemed like the right thing to do.
3 zucchinis or Mexican squashes
3 yellow squashes
1 green bell pepper, chopped
5 roma tomatoes
1 regular tomato, chopped
1 large yellow onion, chopped
2 tbsp minced garlic
4 basil leaves, chopped
1 tbsp sugar
1 tsp oregano
salt & pepper
Preheat oven to 200 degrees. Thinly slice zucchinis, squash and roma tomatoes. Over medium-high heat, sauté the zucchinis and squash with some olive oil until lightly browned. Sprinkle with salt & pepper and set aside. To make the sauce - In the same pan, sauté the onion and garlic with olive oil for 5 minutes. Add green bellpepper and cook for 2 minutes. Add chopped tomatoes, salt, sugar and oregano and simmer for 5 minutes.
To assemble the baking dish, layer it with the sauce and top it with chopped fresh basil. Layer the zucchini, squash and roma tomatoes on top and sprinkle with parmesan cheese. Bake for 15 minutes.
