They say you should eat fish twice a week, but I've always been too intimidated to cook it! I don't know why. My dad grills salmon to perfection and I'm not sure I can duplicate his magic. So basically, I only eat fish when I make a trip home. And I'm home right now. Hence, the fish. But I'm deciding right now to overcome this culinary stronghold and start cooking fish weekly. I can do it!
This is a very easy, simple dish. You rub the salmon with a 4-ingredient marinade, then cook it. I had it grilled and it was perfect. It could also be broiled.
Salmon is so nutritious. Aside from the high amount of protein and "good" fats, a 4oz serving contains a full day's requirement of vitamin D. Not many foods can make that claim!
Asian Glazed Salmon
4 salmon filets
3 tbsp olive oil
2 tbsp soy sauce
1.5 tbsp minced garlic
1 tbsp dijon mustard
In a small bowl, mix the olive oil, soy sauce, garlic & mustard until it thickens. Rub it on the salmon, and reserve a little sauce to drizzle on the fish after cooking. Grill it for 5 minutes on each side. Enjoy!
