Sometimes simplicity is the tastiest way. Fresh tomatoes with a few seasonings baked in the oven will literally melt in your mouth! This is a good low-calorie snack with lots of lycopene and half a day's worth of vitamin C. And basically no fat. So enjoy it!
Parmesan Baked Tomatoes
1 large tomato
1/4 cup freshly grated Parmesan
salt & pepper
Preheat the oven to 450 degrees. Slice the tomato in thick slices. Place in a baking dish. Spread a little olive oil on each and top it with salt, pepper, cheese and oregano. Bake for 12 minutes, or until the cheese is melted.
