Dinner-time at the T's house just got real.
This recipe started because E had an abundance of pre-sliced apples that were going bad and needed to be used asap. I've been wanting to make this fall dish soon anyway because, 1: it's pretty. 2: it has healthy, fresh ingredients. 3: normally I can imagine how flavors will taste together, but this combination is impossible to imagine until you try it. Chicken, apples, sweet potatoes, brussel sprouts and bacon? Oh the anticipation, the suspense, the uncertainty!
Whoever is reading this (mom), please know that this meal is my favorite recipe on my blog thus far. No kidding!
I don't know how to describe it. It's extremely flavorful and comforting. It would make an excellent Thanksgiving meal. D isn't a huge brussell sprout lover, but he thought they were fantastic in this dish.
Oh, and the best part? The preparation process is like therapy. Some may not enjoy it, but chopping veggies is so peaceful for me. This isn't a chaotic, too-many-things-happening-at-once kind of cooking. It's simply chopping and stirring into the skillet, giving rise to the most delicious aromas - redolent of Thanksgiving season! Be prepared to feel like a true chef while you're concocting this masterpiece and impressing anyone who is within smelling distance.
chicken apple sweet potato skillet
1 lb boneless skinless chicken breast, cut into bite size pieces
1 medium onion, diced
1 large sweet potato, cut into half inch cubes
2 cups brussell sprouts, quartered
3 slices bacon, cut into small pieces
2 apples, cut into half inch cubes
3 tbsp minced garlic
4 tbsp olive oil
1 cup chicken broth
1 tsp fresh thyme
1/2 tsp ground cinnamon
salt & pepper
Season chicken with garlic pepper, garlic powder, and salt. Cook chicken in a skillet with 2 tbsp oil until browned on both sides, about 5 minutes. Place chicken on a plate to the side. Add the remaining 2 tbsp oil to the skillet and add the bacon until it starts to brown, about 7 minutes. Add onion and cook for 10 minutes (yes, it will cook with a little bacon grease!). Add brussells and cook for 10 minutes. Add sweet potatoes and cook for 10 minutes. (At any point, if it starts getting dry, just add a little chicken broth) Add apples, garlic, thyme and cinnamon and cook for 3 minutes. Add 1/2 cup chicken broth and cook until it dissolves. Add cooked chicken to the skillet and the remaining 1/2 cup chicken broth. Season with salt and pepper.
