I think I'll start eating breakfast for dinner every Monday. Make it a tradition. I never get around to cooking a real breakfast in the mornings, but I definitely need my fix of eggs at some point.
I was definitely craving breakfast burritos today. I was triggered by my little toddler friend, Hope. I watched her eat a breakfast burrito from McDonald's yesterday morning. It took her like 30 minutes to eat it and she was humming with gladness all the while. I wanted one. But it's so much more rewarding to make it yourself, and SO much healthier. I used egg whites instead of whole eggs, whole wheat tortillas instead of white, veggie crumble instead of sausage, no cheese but TONS of salsa and avocado! Next time I think I'll add cubed sweet potatoes. Yum.

egg white breakfast burritos
1 tortilla 3 egg whites 1/4 cup onion 1/4 cup bellpepper 1 tsp olive oil 1/4 cup Boca veggie crumble 1/2 cup salsa diced avocado diced tomato 1 tsp Smart Balance butter salt & pepper
Preheat oven to 450 degrees. Chop your onions and bellpeppers. In a skillet over medium heat, add the olive oil and saute the onions and bellpeppers for 10 minutes, or until very soft. Add sausage (this particular type is already cooked - just needs to be heated) and let cook for a few minutes. Add egg whites and seasonings. Let it cook until it's nice a fluffy, just a minute or two. Remove from the heat. Spoon mixture over tortilla. Add diced tomatoes. Wrap it up like a burrito and spread the Smart Balance on top. Bake for 5 minutes. Top it with salsa and avocado. Enjoy!
