Isn't she adorable?
It's like a mini, slightly healthier apple pie. Only slightly because it still has sugar and butter inside. But only a little! And it's crustless. So there.
Also, it will make your house smell like heaven.
crockpot baked apples
4 apples 1/4 cup brown sugar 1/4 cup walnuts 1/4 cup butter 1 tsp cinnamon 1 cup orange juice or apple juice (I used orange)
Core the apples. (I'm sure there's a utensil made for coring an apple, but I don't have one. So I just used a knife and scraped out the middle seeds and core. You can peel it if you want, but it really isn't necessary. By the time it's done, the skin is just as soft as the apple.) For the filling, mix the brown sugar, walnuts, butter and cinnamon. It will be easier if you let the butter sit at room temperature for 10 minutes or so. Once the apples are cored, spoon some filling in each one and place in the crock pot. Pour the juice over and around. Set on HIGH for 2-3 hours. Enjoy!
