My mom and I made this chili together this past weekend and it was FAB. It's a good, hearty, flavorful stew. And better yet, the recipe is found on the back of McCormick's White Chicken Chili seasoning packet. Don't underestimate the recipes printed on packages like this! My mom and I have tested it. We made a homemade white chicken chili seasoning, and it just didn't come close to McCormick's. This is a super quick, easy, cheap dinner!

white chicken chili
1 lb boneless, skinless chicken breasts, cut into 1 inch cubes 1 tbsp vegetable oil 1 package McCormick's White Chicken Chili seasoning 1 cup water 1 (15 oz) can white beans, undrained 1 (15 oz) can corn, drained Cumin, salt and pepper Additional toppings: shredded cheddar cheese, avocado, sour cream, chopped cilantro
Heat oil in large skillet on medium-high heat. Sprinkle cumin, salt & pepper on chicken and add to the skillet; cook and stir 3 to 5 minutes or until no longer pink. Stir in Seasoning Mix, water and beans. Bring to boil. Reduce heat to low; cover and simmer 10 minutes or until chicken is cooked through. Serve with desired toppings. Enjoy!
