I decided I'm going to eat a salad a day for the month of June. Whereas I'm a stew/comfort food kind of girl in the winter, salads are my summertime crave. It just makes sense. Like today for example - I went on a long walk at the Katy Trail, took a nap by the pool, and ended the day with this fresh, leafy goodness. Half spinach, half kale, black beans, avocado, tomatoes, red onions, dried blueberries topped with a hearty fried egg.
Noteworthy tip: a fried egg makes everything better.

egg, black bean & kale protein salad

- 1 cup spinach
- 1 cup chopped kale
- 1/2 cup chopped tomatoes
- 1/4 cup red onion slices
- 1/3 cup black beans
- a few avocado slices
- 1 fried egg
- salad dressing
- Wash and chop the spinach & kale, and add to a large bowl. Mix in all of the yummy toppings. Pour 2 tbsp of your favorite salad dressing, and toss. Throw a fried egg on top and enjoy!
