I promise there's an egg in there somewhere. Two of them, actually.
This breakfast was simply delightful. I only have two tips for you when you decide to make huevos rancheros:
- Use fresh tortillas
- Roll your r's when you say rancheros
Those things are important.
I spent my Labor Day weekend with my mom, and this dish was one of our projects. Right after we got our toes pampered. Mhmm. Today I'm thankful for mothers and mid-morning Mexican fare. In that order.

- 2 eggs
- 1 fresh tortilla
- scoop of black beans, cooked and seasoned
- handful of shredded cheddar cheese
- sprinkle of feta cheese
- salt & pepper
- Heat up the tortilla in a frying pan on the stove top. 2 minutes per side. Fry the eggs - use bacon grease for best results! Layer the tortilla, black beans, cheddar cheese, fried eggs, salt & pepper, salsa, avocado, feta cheese. Perfect order!
