Sundays are my favorite! Today involved cooking, knitting, reading, piano, christmas music, movies, and a nap. Seriously the best Katie-time I've had in quite some time.
And I had a good, quiet moment with Jesus this morning. This is a verse I've heard a million times, but today it really meant a lot to me. "Everyone who drinks this water will be thirsty again, but whoever drinks the water I give him will never thirst. Indeed, the water I give him will become in him a spring of water welling up to eternal life." John 4:13-14. A timely reminder that Jesus is the only one who completes me and fills the empty spots in my life :)
AND I got to eat these for breakfast! I got this recipe from Charlotte's blog, EasyHealth Living. These were so much fun to make. I always love to cook but sometimes I'm specifically in the mood to assemble food. I think it's the Christmas season that brings out my craftiness.
So the crust is made from frozen sweet potato tots. I let mine thaw for about 20 minutes but they were still hard to smoosh, so I put in the microwave for about 15 seconds. Then I used a small mason jar to smoosh them down and form a crust. I also used my fingers to make it more even. Then you cook the tots on 400 degrees for 10 minutes by themselves.
While they're cooking, start dicing the ham and beating the eggs. After the 10 minutes, put the ham, beaten eggs and a little cheese on top. Cook for another 15 minutes on 350. That's it!
sweet potato breakfast cups
Prep time: 15 mins
Cook time: 25 mins
Total time: 40 mins
Serves: This recipes is for 6 breakfast cups (3 servings)
- Frozen sweet potato tots (5-6 per breakfast cup)
- 3 eggs
- shredded cheese
- diced ham
- salt & pepper
- oil for greasing pan
- Preheat oven to 400.
- Defrost the sweet potato tots (let them thaw for a while, or nuke in the microwave). Assemble 5-6 tots per muffin cup, and press them down with a small mason jar or your fingers to form a crust.
- Cook for 10 minutes.
- Dice the ham and put in each cup.
- Beat the eggs and distribute to each cup.
- Sprinkle a little cheese on top.
- Bake for another 15 minutes at 350.
