This glorified ramen recipe comes from the kitchen of Half Baked Harvest - one of my favorite food blogs! Pictures are important when it comes to food blogging, and Tieghan knows how lure an audience with her camera. Her talent inspires me (on a side note - I bought a mini skillet just so I could make this little guy ... stay tuned).
Anyway, this ramen is pretty dang awesome. Tons of flavor, spice, curry, nuttiness. I don't know how else to say it. It's beautiful.
And organic ramen exists now. So... it's healthy.
AND you can make it in the crockpot! Tieghan gives instructions for stove-top and crockpot, and I (obviously) chose the crockpot route.
thai peanut chicken ramen
-- 1 lb chicken breast
-- 2 tablespoons peanut oil
-- 1 teaspoon fresh grated ginger
-- 1 tablespoon minced garlic
-- 1 sweet potato, chopped & skin removed
-- 2 red bell-peppers, sliced
-- 1/4 cup thai red curry paste
-- 2 teaspoons smoked paprika
-- 1 (14 oz) can coconut milk
-- 4 cups chicken broth
-- 1/4 cup soy sauce
-- 2 tablespoons fish sauce
-- 1/2 cup creamy peanut butter
-- 1 lime, juiced
-- 2 tablespoons brown sugar
-- 4 packages Ramen Noodle Soup (discard seasoning packs)
-- chopped peanuts, for serving
-- chopped cilantro, for serving
1. Add the chicken, peanut oil, ginger, garlic, sweet potatoes, red peppers, curry paste, smoked paprika, coconut milk, chicken broth, soy sauce, fish sauce, peanut butter and brown sugar to the crock pot (in other words, everything except the ramen noodles, peanuts & cilantro). Cover and cook for 6-8 hours on low or 4 hours on high.
2. Cook the ramen noodles separately, just like regular pasta. Boil some water on the stove, add ramen noodles. When they're cooked, drain the noodles (if you add the noodles to the crockpot, they get really mushy & it doesn't make good leftovers. They also soak up a bunch on the liquid. So I like to cook the noodles separately, and I only cook as much as I'm about to eat - because leftover ramen gets mushy too).
3. Put your ramen in a bowl, ladle some soup on top, then add chopped peanuts & cilantro!
